Sushi-Grade Production

We always use fresh salmon farmed in Norway when producing our sushi-grade fillets. The dedicated production factory (M2092) is approved for Ready To Eat according to EC regulation 2073/2005, food category 1.3. Following production, the fillets are frozen at temperatures below 18 degrees Celsius.

Our Testing Procedures

Each LOT of sushi-grade fillets is tested for pathogen bacteria, and we have a hold-and-release procedure, ensuring that the fillets are not shipped to the customer before confirmation on safe levels. We have a well-implemented and strict monitoring routine on production environment in addition to the product itself.

We can offer fillets in various sizes, trims and packaging, depending on the needs of the customer.
