IceFresh and HBC, a part of the Hofseth Group, will be in Davos during the World Economic Forum, January 19–23. Throughout the week, Hofseth salmon and trout, thawed using IceFresh technology, will be served daily at several private venues and corporate events.

What is the benefit of the IceFresh concept?

The IceFresh™ concept aims to revolutionise the global seafood supply chain by replacing the traditional, CO₂-intensive “fresh fish” model with a “frozen-to-refreshed” model. Fish is frozen at peak freshness at the source and thawed with extreme precision only when needed.

This delivers:
• A “fresher-than-fresh” product in terms of texture, taste and appearance
• More than 80% lower CO₂ footprint, primarily through a shift from air freight to sea freight
• Significantly reduced food waste at the retail level
• Improved food safety and nutrient preservation

Unlike conventional thawing, IceFresh™ technology prevents drip loss and structural damage, often resulting in superior quality compared to fish that has spent 7–10 days on ice

What makes HBC®’s technology and business model unique?

HBC® has developed a patented technology platform designed to utilize the entire salmon for bioactive nutrition. While traditional fish processing focuses on fillets (around 40–50% of the fish), HBC® converts side-streams into high-value bioactive peptides, lipids and undenatured collagen.

How does Hofseth address food waste in the seafood sector?
